Ariel Gomez Carusso

Meet our Head Chef, Ariel Gomez Carusso, originally from Buenos Aires, Argentina. His approach to cookery has been shaped by the great culinary traditions of Spain and Italy, where Ariel has deep family roots. As he admits, his greatest inspiration has been his great grandmother, Teresa, who would get up at the break of dawn to cook lunch for their entire family of 15. He can still recall the unique taste and aroma of her dishes.

Apart from her hand-made bucatini with tomato sauce, he also remembers well her always smiling face. Ariel is a strong believer in the power of fresh, locally-sourced produce, passion, and hard work, regardless of whether you cook in Buenos Aires, Malaga or Gran Canaria, where he used to work, or Poland, where he has been living for the last few years.

Seasonality and locality

For us, seasonality and locality are not mere buzzwords but actual guiding principles which we follow on a daily basis. To ensure that our patrons enjoy a premium dining experience, we have fostered a partnership with Ada Augustyniak and Bartek Kembłowski, local farmers from Dobrzyń nad Wisłą. Their organically grown herbs and vegetables, untouched by synthetic fertilisers or pesticides, are a key ingredient of our dishes.

Our menu always reflects the seasonal ebb and flow of the farm's bounty, a testament to our partnership model built on mutual respect and appreciation of the other party’s needs. Only produce that comes from a well-proven and trusted source can guarantee that our cuisine is healthy and offers rich and authentic tastes and flavors which are in season.
